Grilled Sirloin Steaks with Green Olive Butter

Compound butters, such as the one included here, make for easy saucing of almost anything grilled or roasted. They can be made ahead and stored frozen for a few months until you need them. This is one of my favorite compound butters and this dish would be fantastic with 2020 Owsley Pinot Noir with its rich, meaty flavors.
Grits and Greens

Reminiscent of one of the great Southern dishes, be sure to use regular stone ground grits and not the quick cooking variety. Flavor and texture are much better. My two favorite producers are Anson Mills and Weisenberger. This dish works well with the 2020 Vine Hill Pinot Noir.
Coconut-Miso Salmon Curry

This is a more delicate curry. Salmon is used here but any flaky white fish, shrimp or scallops would also work well and benefit from the quick poaching. You can have it ready for the table in half an hour. I love this with the 2021 Winemaker’s Release Dutton Ranch Chardonnay.
Pasta with Bacon, Cheese, Lemon, and Pine Nuts

Any cool shaped pasta can be used here. I chose trofie because it has nooks and crannies for the sauce to get into. This is a simple recipe and great for a quick weeknight entrée. The butter browned pine nuts are delicious but if you can’t find them then slivered almonds also are great. This has the richness to go with the 2021 Russian River Ranches Chardonnay.
