Chicken Thighs with Dill Hummus Sauce

INGREDIENTS

2 lb boneless, skinless chicken thighs

½ tsp salt

½ tsp pepper

2 Tbsp olive oil

1 (10-oz) pkg plain hummus

¼ cup lemon juice

2 Tbsp fresh chopped dill

4 cloves garlic, minced

⅓ cup water

INSTRUCTIONS

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.

  2. Meanwhile, stir together hummus, lemon juice, dill, and garlic, adding water, 1 Tbsp at a time, until sauce is pourable but still thick. Serve sauce with chicken.
