Pistachio Romesco Grilled Chicken

3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
3 Roma tomatoes, halved
¼ cup olive oil, divided
1 tsp salt, divided
1 tsp pepper, divided
1 (12-oz) jar roasted red peppers, drained
4 cloves garlic, peeled
⅓ cup roasted, salted shelled pistachios
3 Tbsp sherry vinegar
1 Tbsp smoked paprika
Preheat grill or grill pan to medium-high heat. Brush chicken and tomatoes with 2 Tbsp oil; sprinkle with ½ tsp each salt and pepper.
Grill chicken, covered, 4 to 5 minutes per side or until done. Grill tomatoes, covered, 3 minutes per side or until grill marks appear.
Process tomatoes, roasted peppers, garlic, nuts, vinegar, 2 Tbsp oil, paprika, and ½ tsp each salt and pepper in a food processor or blender until smooth.
Slice chicken; serve with sauce.
