Dried Cherries In A Pinot Noir Reduction

Spread this reduction on a bed of cream cheese smeared on a round rice cracker and enjoy a glass of Sonoma Cutrer Pinot Noir. For a wonderful way to complement your meal.

Ingredients
8 ounces dried Bing cherries
2 cups Vine Hill Pinot Noir
1 tsp sugar
1 package small round rice crackers
1 wedge triple-cream cheese (at room temperature)
crystallized ginger in very thin slices
Directions
Reduce the Pinot Noir and sugar to ½ cup.
Add the dried cherries and let soak for at least two hours, letting them cool to room temperature.
Use small round rice crackers.
Spread a bit of the cheese on the cracker.
Place a soaked cherry on the cheese and finish with a slice of the ginger on the cherry.
Serve immediately after assembling to pair with the Sonoma-Cutrer Pinot Noir.
