Ingredients
2 (12.5-oz) cans chopped cooked chicken
1 (24-oz) pkg refrigerated sour cream and chive mashed potatoes
2 cups panko breadcrumbs, divided
1 cup shredded Parmesan cheese
3 Tbsp chopped fresh basil
6 Tbsp olive oil, divided
Directions
Combine chicken, potatoes, 1 cup panko, cheese, and basil in a large bowl; season with salt and pepper, if desired. Shape mixture into 18 patties. Dredge patties in 1 cup panko to coat.
Cook patties, in batches, in 3 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat until browned and crisp.
Divide patties among 6 plates.
