Pork Chops with Pineapple-Cucumber Salsa

6 bone-in pork chops
¾ tsp salt
½ tsp pepper
2 cups chopped fresh pineapple
1 small organic cucumber, finely chopped
1 organic jalapeno pepper, minced
¼ cup finely chopped red onion
1 Tbsp fresh lime juice
1 Tbsp olive oil
Preheat grill to medium-high heat. Sprinkle pork chops with ½ tsp each salt and pepper. Grill 4 to 5 minutes per side or until done.
Meanwhile, combine pineapple, cucumber, jalapeño, onion, lime juice, oil, and ¼ tsp salt. Serve salsa over pork chops.
