6 (6-oz) salmon fillets
3 Tbsp olive oil, divided
1 lemon, zested and juiced
1 Tbsp chopped fresh oregano
Directions
Lightly season salmon with salt and pepper, if desired. Cook salmon in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or to desired doneness.
Stir together 2 Tbsp oil, lemon zest, lemon juice, and oregano. Spoon over salmon.
