Curry-Lime Chicken

    2 Tbsp grated ginger

    1 Tbsp curry powder

    1 tsp lime zest

    2 Tbsp lime juice

    2 cloves garlic, minced

    3 bone in chicken breasts, halved

    2 Tbsp olive oil

    ¼ tsp salt

    ¼ tsp pepper


    1. Preheat grill to medium-high heat. Combine ginger, curry powder, lime zest, lime juice, and garlic.

    2. Carefully loosen skin from chicken breasts; rub ginger mixture underneath skin. Brush chicken with oil; sprinkle with salt and pepper.

    3. Grill chicken 5 to 6 minutes per side or until done.
