Butter Nut Chicken

    Ingredients

    2¼ lb boneless, skinless chicken breasts

    ½ tsp salt

    ¼ cup butter, divided

    ½ cup roasted, salted cashews

    ⅓ cup chopped fresh parsley

    Directions

    1. Pound chicken to ½-inch thickness between plastic wrap using a meat mallet; sprinkle with salt.

    2. Melt 2 Tbsp butter in a large skillet over medium-high heat. Cook chicken, in batches, 4 minutes per side or until browned.

    3. Add 2 Tbsp butter and nuts. Cook 3 minutes or until nuts are toasted and chicken is done. Sprinkle with parsley.
