Ground Turkey Kofta Bowls

Ingredients
1½ lb ground turkey (or use ground chicken)
½ cup chopped onion
⅓ cup chopped fresh flat-leaf parsley
1 Tbsp Greek seasoning
2 (12-oz) pkg frozen riced cauliflower (or use microwavable rice)
1 (9-oz) pkg chopped romaine lettuce
1 English cucumber, sliced
¾ cup sliced roasted red peppers, drained
1 cup pitted kalamata olives
Directions
Preheat grill or grill pan to medium-high heat. Mix together turkey, onion, parsley, and seasoning in a large bowl using hands. Season lightly with salt and pepper.
Shape turkey mixture onto 12 oblong patties; thread onto 12 metal or bamboo skewers. Coat patties with cooking spray. Grill 8 to 10 minutes or until done, turning occasionally.
Cook cauliflower rice according to package directions. Divide lettuce and cauliflower rice among 6 bowls. Top with cucumber, roasted red peppers, olives, and kabobs. Sprinkle with more parsley, if desired.
