Crispy Parmesan-Ranch Chicken

2 lb boneless, skinless chicken breasts, halved crosswise
1¼ cups panko breadcrumbs
½ cup freshly grated Parmesan cheese
1 (1-oz) envelope Ranch dressing mix
¼ cup olive oil, divided
Pound chicken to an even thickness between plastic wrap using a meat mallet.
Combine breadcrumbs, cheese, and Ranch mix in a shallow bowl. Brush chicken with 2 Tbsp oil; dredge in breadcrumb mixture, pressing gently to adhere.
Cook chicken, in batches if necessary, in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.
