Tilapia with Pecan Browned Butter

INGREDIENTS

6 tilapia fillets, patted dry (thawed, if frozen; about 2 lb)

2 Tbsp olive oil

1 cup chopped pecans

½ cup butter

INSTRUCTIONS

  1. Season fish with salt and pepper. Cook fish in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side or until fish flakes with a fork. Remove fish from skillet, and keep warm. Wipe skillet clean.

  2. Add nuts and butter to skillet; cook 3 minutes or until butter is browned and nuts are toasted, stirring constantly.

  3. Top fish with nuts.
