INGREDIENTS

2 Tbsp orange juice

2 Tbsp Southwest seasoning

¼ cup olive oil, divided

2 (1-lb) pork tenderloins, trimmed

¼ cup chopped fresh cilantro

1 (15-oz) container chunky guacamole

INSTRUCTIONS

  1. Preheat oven to 350°F. Combine orange juice, seasoning, and 2 Tbsp oil. Rub mixture all over pork.

  2. Cook pork in 2 Tbsp hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until browned. Transfer skillet to oven.

  3. Bake 15 minutes or until a meat thermometer inserted reads 145°F. Let stand 5 minutes before slicing. Sprinkle with cilantro and, if desired, salt and pepper.

  4. Serve pork with guacamole.
