Seared Salmon with Pesto Cream Sauce

INGREDIENTS

6 (5-oz) salmon fillets

½ tsp salt

½ tsp pepper

2 Tbsp olive oil

½ cup half and half

½ cup cream cheese, softened

¼ cup pesto

INSTRUCTIONS 

  1. Sprinkle fish with salt and pepper. Cook fish in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork.

  2. Meanwhile, heat half and half and cream cheese in a small saucepan over medium heat. Cook 3 minutes or until cheese melts, stirring often. Stir in pesto. Spoon pesto sauce over fish.
