INGREDIENTS

1 lemon

4 (6-oz) cans wild Alaska pink salmon, drained and flaked

3 large eggs, lightly beaten

½ cup finely chopped red bell pepper

¾ cup panko breadcrumbs

¼ cup olive-oil mayonnaise

2 Tbsp chopped fresh cilantro

2 Tbsp olive oil

6 hamburger buns

6 lettuce leaves

2 tomatoes, sliced

INSTRUCTIONS

  1. Grate, zest and squeeze juice from lemon. Combine salmon, eggs, bell pepper, lemon zest, lemon juice, breadcrumbs, mayonnaise, and cilantro in a bowl.

  2. Shape mixture into 6 large patties. Cook patties in hot oil in a large nonstick skillet over medium heat 4 to 5 minutes per side or until done.

  3. Serve burgers on buns with lettuce, tomato, and favorite condiments.
