Lemon-Pepper Chicken Pasta

INGREDIENTS

1 (18-oz) pkg family-size frozen mozzarella cheese ravioli

1 lb thick slice deli lemon-pepper chicken (or use 1 lemon-pepper rotisserie chicken, chopped)

¼ cup olive oil

¼ cup butter

¼ cup lemon juice

1 Tbsp lemon zest

1 (6-oz) pkg shredded Parmesan cheese

⅓ cup chopped fresh flat-leaf parsley (or basil)

INSTRUCTIONS

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.

  2. Cut deli meat chicken into cubes.

  3. Heat oil and butter in a large skillet over medium heat until butter melts. Add lemon juice and zest. Season sauce with salt and pepper; cook over LOW heat 1 minute.

  4. Toss together ravioli, ¼ cup pasta water, and lemon sauce in a large bowl. Add chicken and cheese; toss again. Sprinkle with parsley. Season again to taste.
