INGREDIENTS

3 red bell peppers, sliced

1 onion, sliced

3 cloves garlic, minced

½ tsp salt, divided

3 Tbsp olive oil, divided

6 (6-oz) grouper fillets

¾ tsp Italian seasoning

½ cup chopped fresh basil

INSTRUCTIONS

  1. Cook bell peppers, onion, garlic, and ¼ tsp salt in 1 Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until tender and browned.

  2. Meanwhile, sprinkle fish with Italian seasoning and ¼ tsp salt. Cook fish, in batches, in 2 Tbsp hot oil in another large skillet over medium-high heat 5 to 6 minutes per side or until browned and fish flakes with a fork.

  3. Serve fish with bell pepper mixture. Sprinkle with basil.
