INGREDIENTS

2¼ lb grouper fillets

½ tsp salt

½ tsp pepper

1 onion, chopped

2 Tbsp olive oil

3 Tbsp minced garlic

2 Tbsp curry powder

1 (14.5-oz) can diced tomatoes

1 (13.5-oz) can coconut milk

¾ cup chopped peanuts

¼ cup chopped fresh cilantro

INSTRUCTIONS

  1. Preheat oven to 400°F. Place fish on a large greased baking sheet; sprinkle with salt and pepper. Bake 10 to 15 minutes or until fish flakes with a fork.

  2. Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes. Add garlic and curry powder; cook 2 minutes or until fragrant.

  3. Add tomatoes and coconut milk, reduce heat to medium, and cook 8 to 10 minutes or until thickened. Serve sauce over fish; sprinkle with cilantro, if desired.
