INGREDIENTS

2 lb ground pork

¼ tsp salt

¼ tsp pepper

2 Tbsp olive oil

½ cup natural creamy peanut butter

2 Tbsp low sodium soy sauce

2 cloves garlic, minced

1 Tbsp grated ginger

2 tsp Asian chili garlic sauce

1 head green leaf lettuce, leaves separated

⅓ cup chopped fresh cilantro

1 lime, cut into wedges

INSTRUCTIONS

  1. Cook pork seasoned with salt and pepper in hot oil in a large skillet over medium-high heat 8 minutes or until pork is browned and crumbly; keep warm.

  2. Whisk together peanut butter, soy sauce, garlic, ginger, and chili garlic sauce.

  3. Divide pork among lettuce leaves; drizzle with peanut sauce. Sprinkle with cilantro, and serve with lime wedges.
