Grilled Chicken with Fresh Corn Relish

INGREDIENTS

3 Tbsp olive oil, divided

2 Tbsp honey

½ tsp garlic powder

1½ lb boneless, skinless chicken breasts

¾ tsp salt, divided

¾ tsp pepper, divided

3 ears corn, shucked

¼ cup chopped fresh basil

1½ tsp lemon zest

½ jalapeno pepper, seeded and minced

INSTRUCTIONS

  1. Preheat grill or grill pan to medium-high heat. Stir together 2 Tbsp oil, honey, and garlic powder.

  2. Cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet; sprinkle with ½ tsp each salt and pepper. Rub honey mixture all over chicken.

  3. Sprinkle corn with ¼ tsp each salt and pepper. Wrap corn in foil, twisting ends to seal.

  4. Grill corn, covered, turning occasionally, 12 minutes. Grill chicken, covered, 5 to 6 minutes per side or until done.

  5. Cut kernels from cobs; discard cobs. Toss together corn, basil, 1 Tbsp oil, lemon zest, and jalapeno pepper. Spoon corn mixture over chicken.
