Garlicky Roasted Salmon and Brussels Sprouts

INGREDIENTS

8 cloves garlic, divided

⅓ cup olive oil

2 Tbsp finely chopped fresh flat-leaf parsley, divided

1 tsp salt, divided

¼ tsp pepper

1½ lb Brussels sprouts

1½ lb salmon fillets, patted dry

¾ cup low-sodium chicken broth

1 wedges (optional)

INSTRUCTIONS

  1. Preheat oven to 450°F. Mince 3 garlic cloves; combine with oil, 1 Tbsp parsley, ½ tsp salt, and pepper in a small bowl.

  2. Cut 5 garlic cloves in half; toss with Brussels sprouts and half of oil mixture in a large roasting pan.

  3. Bake 15 minutes. Remove from oven; stir, and arrange fish around Brussels sprouts.

  4. Combine broth and remaining oil mixture; drizzle over fish. Sprinkle with 1 Tbsp parsley and ½ tsp salt. Bake 10 minutes or until fish flakes with a fork. Serve with lemon wedges, if desired.
