INGREDIENTS

2 lb boneless, skinless chicken thighs

½ tsp salt

½ tsp pepper

2 Tbsp olive oil

⅓ cup honey

⅓ cup low-sodium chicken broth

¼ cup Dijon mustard

1 Tbsp white vinegar

2 Tbsp chopped fresh thyme

INSTRUCTIONS

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.

  2. Stir together honey, broth, mustard, and vinegar in a small saucepan over medium heat; cook 5 minutes or until thickened. Stir in thyme. Serve sauce with chicken.
