INGREDIENTS

1½ lb boneless, skinless chicken thighs

½ tsp salt

1 tsp pepper, divided

2 Tbsp olive oil

2 Tbsp butter

1 (16-oz) pkg sliced mushrooms, chopped

3 cloves garlic, minced

½ cup white wine

¾ cup heavy cream

¾ cup freshly grated Parmesan cheese

INSTRUCTIONS

  1. Sprinkle chicken with ½ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side.

  2. Meanwhile, melt butter in a saucepan over medium heat. Add mushrooms and garlic; cook 5 to 6 minutes or until lightly browned and tender.

  3. Add wine; cook until liquid is reduced by half. Add cream and ½ tsp pepper; cook 4 minutes or until thickened. Stir in cheese until melted. Spoon mushroom sauce over chicken. Serve over rice.
