Baked Lemon-Basil Chicken

INGREDIENTS

1½ cups long grain brown rice, rinsed

1 large lemon

2 lb boneless, skinless chicken breasts

2 cloves garlic, minced

¼ cup white wine

1 Tbsp dried basil

1 tsp salt

½ tsp pepper

INSTRUCTIONS

  1. Cook rice according to package directions. Meanwhile, preheat oven to 400°F.

  2. Grate zest and squeeze juice from lemon. Place chicken in a baking dish coated with cooking spray.

  3. Whisk together garlic, wine, lemon zest, and basil; pour over chicken. Sprinkle with salt and pepper.

  4. Bake, uncovered, 30 minutes or until chicken is done.

  5. Sprinkle with lemon juice; slice chicken, and serve over rice.
