INGREDIENTS

6 slices center cut bacon, chopped

6 (6-oz) grouper fillets

½ tsp salt

½ tsp pepper

3 tomatoes, chopped

3 cloves garlic, minced

2 Tbsp olive oil

¾ cup ¾ cup

½ cup chopped fresh parsley

INSTRUCTIONS

  1. Cook bacon in a large skillet over medium heat 6 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet.

  2. Sprinkle fish with salt and pepper; cook fish in hot drippings over medium-high heat 4 to 5 minutes per side or until fish flakes with a fork.

  3. Meanwhile, cook tomatoes and garlic in hot oil in a large skillet over medium-high heat 6 minutes. Add cream; cook 3 minutes or until thickened. Serve sauce with fish; sprinkle with parsley.
