Bacon-Ranch Chicken Pasta Bake

INGREDIENTS

12 oz whole wheat penne pasta

12 slices center cut bacon

1 onion, chopped

1 (1-oz) envelope Ranch dressing mix

6 oz ⅓ less fat cream cheese

2 cups shredded rotisserie chicken

4 green onions, thinly sliced

1 cup shredded mozzarella cheese

INSTRUCTIONS

  1. Preheat broiler. Cook pasta according to package directions.

  2. Meanwhile, cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until done, reserving 2 Tbsp drippings in skillet. Crumble bacon.

  3. Add onion to skillet, and cook 5 to 7 minutes or until tender. Add Ranch mix and cream cheese; cook 4 to 5 minutes or until slightly thickened. Add pasta, chicken, and onions; toss.

  4. Transfer pasta mixture to a greased 13- x 9-inch baking dish. Sprinkle with cheese and bacon. Broil 2 to 3 minutes or until top is browned.
